Muscadine Cobbler
Ingredients for muscadine cobbler
The muscadine is Louisiana’s native grape, and one of the state’s most delicious wild fruits. All you need is a cup of ripe muscadines to make this wonderful cobbler, bursting with sweet and tart flavors, brightened with notes of lemon.
1 cup muscadine grapes
1 tsp grated lemon peel
3/4 cup all-purpose flour
1 tsp baking powder
pinch of salt
1/2 cup sugar
1/2 cup milk
1/2 stick of butter
Pulp removed from muscadine grapes
Directions:
—Separate the pulp from the muscadines and reserve the skins.
—Remove seeds from pulp and mix with the reserved skins.
—Cook over low to medium heat for 15 minutes, with one tablespoon of water, three teaspoons of sugar and grated lemon peel until the skins are tender. Stir and set aside.
—In a separate bowl, mix flour, baking powder, salt, sugar and milk. Stir well.
—In a 9 inch glass pie plate, melt 1/2 stick of butter.
—Spoon the flour mixture over the butter, then spoon muscadine mixture over batter.
—Bake at 350 degrees for 20-25 minutes.
